Turkey Chili
Easy, tasty and good for you because of a few secret
ingredients! Double it and freeze half for later.
Ingredients
Large onion, chopped
2 cloves garlic, minced
2 lbs. ground turkey
1 can Ro-Tel – diced tomatoes and chilies with a little kick
1 28 oz. can crushed organic tomatoes
1 can beans of choice. Red kidney, black or garbanzo
3 Zucchini shredded *
4 Carrots, shredded *
1/3 cup freshly milled flax**
1 Tbls turmeric ***
Pinch of chili powder or cayenne to taste
Salt and pepper to taste
* A mandolin
makes this a cinch. Feel free to add other veggies like beets, broccoli stalks, or too.
**Flax is a
great source of fiber, omega-3s and lignans
*** Curcumin
is the main active ingredient in turmeric. It has powerful anti-inflammatory
effects and is a very strong antioxidant.
How to:
Add turkey,
onion and garlic to large (5 qt.) pot.
Sauté over
medium until all meat is browned. Drain.
Add
tomatoes, beans, veggies and Turmeric. Mix well. It will appear dry, don’t worry.The moisture from the zucchini will be released making it more liquid.
Simmer on
medium low for at least thirty minutes stirring occasionally.
Add flax.
Mix well.
Adjust
seasonings. Serve with a big green salad.
